Making good dough consistently is important but difficult. Firmness, stickiness and extensibility are affected by water absorption, ingredients, temperature and ways of mixing. The way of mixing directly change the gluten protein behavior, which is responsible for the elasticity.
MN-16 standardize and saving time on mixing. Each time MN-16 is capable to produce 16kg of dough. The double blade design can mix dough with up to 60% water content, which is not easy for traditional pin type kneader. The blades are also detachable for easy cleaning.
